I love cheese. All cheese.
As there are over 400 different varieties of Italian cheese, I’m in the right place, particularly as Parmesan, Gorgonzola and Mozzarella are among my top favourites. Well, with Asiago, Fontina… any formaggio di fossa… Provolone… Taleggio… Oh dear!
Another of my favourites is goat’s cheese, but in our corner of Le Marche, I’ve found it difficult to find.
Daniele asked at the local shop.
“Nobody wants it”, was the reply.
“We do!”, he said.
“Alright, I’ll order some.”
It arrived today:
Now, a little bit of Cheddar and some Stilton…Cheese Heaven.
I’ve never had a problem eating cheese late at night, but actually we say that this gives you nightmares rather than sweet dreams. I’ve got no idea whether this is based on fact, or just “an old wives’ tale”. More often than not, these can be gems of wisdom… maybe someone out there knows.
I’ve given one of the reasons on your site, Linda. It was the main reason, as you so brilliantly put it: “Eating local and eating well”.
Lucky you – and what brilliant ways to use it. (Formaggio di fossa is cheese which has been matured underground: caves, wells, cellars, etc. It’s delicious.)

there’s a goat/cow farmer at Montecarotto with a small shop, opened every saturday from 8-12 am. Just at the entrance from Montecarotto, follow the sign of the parco del Trabocco (a hiking path). At the beginning of this walking path you’ll see the fattoria. Try to find the son Marco. He’ll call you when the fresch goat cheese and the ricotta is pronta !
